Great Stuff

Here are some random things I recommend. My friend Sarajane gave me an excellent salsa recipe. It's very easy and really good.

Simply Delicious Salsa

1 pkg. Good Seasons Italian dressing mix prepared with oil & vinegar according to package instructions (I do the low oil directions)
1 can black beans, drained and rinsed
1 can corn, drained
3 tomatoes diced or 2 cans petite diced tomatoes
1/4 cup green onion, finely chopped
1/2 bunch cilantro, finely chopped
2 avocados, diced

Mix dressing, stir in everything but avocado. Mix in avocado just before serving.

Another random thing Parker really enjoys is Storyline Online. It has actors like Sean Astin reading quality children's books. The actors generally do a great job on reading the story and it shows both the reader and the illustrations. I really appreciate that the stories offered are great children's literature. I wish they had more books, but what they have are excellent. Most of the stories are between 5 and 15 minutes. Anyway, if you have young kids, check it out.

Time Saving Tip:Many of you may already do this, but if I ever don't use all of my green peppers or onions I chop them up and freeze them. They won't taste the same fresh, but for cooking they work great. That way if I randomly decide to make sweet and sour chicken, I can, even if I don't have any fresh peppers. Of course not everything freezes well, but a lot of things do. It also saves time to have things pre-chopped.
